It's no secret that consuming different varieties of local and seasonal fruits and vegetables is good for our health and that of the planet: they taste better, meet our nutritional needs, contain fewer pesticides and are less Dear.
Here are our favorite seasonal vegetables for fall:
Squashes are one of the most medicinal foods in our vegetable garden: they are rich in beta-carotene or provitamin A and vitamins C and E which are powerful antioxidants. They also contain lycopene, several B vitamins (B2 and B6 and folic acid), and minerals such as potassium, phosphorus, magnesium , iron and zinc . A nutritional bomb that contributes to the health of the skin , bones and teeth, as well as the balance of the nervous and digestive systems.
They can be used in many culinary preparations: in cream, in soup, in broth, in puree, in the oven, sautéed, gratinated and even as a base for cakes, tarts and puddings!
They are rich in B vitamins and vitamin E. As for minerals , they contain high doses of copper, phosphorus and iron, which make them extremely beneficial for the heart and strengthen our immune system.
Some can be eaten raw but the majority are enhanced by cooking. They must be cleaned and cooked as quickly as possible to take full advantage of their nutritional properties but also to facilitate their digestion .
Chestnuts and chestnuts
They contain minerals like manganese, magnesium or potassium, as well as iron and phosphorus. They have a high carbohydrate content but also lots of fiber and anti-inflammatory properties. They are an excellent prebiotic food that our intestinal bacteria love.
Don't hesitate to succumb to the incomparable aroma of the chestnut stalls which are set up in all cities until the end of February :)
You can also eat other vegetables from October such as beetroot, pumpkin, spinach, eggplant, carrot, broccoli, leek, cauliflower or even turnip (cooked or in soup for pleasure).

Their potassium intake helps cleanse the kidneys, promoting the body 's natural detoxification.
Pomegranate also contains pectin, a soluble fermentable fiber which contributes to its purifying effect and helps maintain our microbiota in good health . Finally, its richness in tannins helps to de-inflame the intestinal mucous membranes.
Its grains will easily brighten up your salads, your fried vegetables or your desserts and give them a little touch of freshness. And finally, a secret: its juice is considered an excellent aphrodisiac ;)
Fig is rich in antioxidants, minerals , vitamin B and fiber. They are excellent for transit!
The season only lasts until November, so don't miss out! Buy or pick them, still fleshy, slightly wrinkled and soft to the touch because they no longer ripen after picking. Little tip: violets are tastier than green ones. Incorporate them into your sweet and savory recipes, and eat them raw or cooked.
You can also eat other fruits in autumn, such as clementines, apples, plums or even pears.
