I like galette, do you know how?

Well, without butter! Dreaming of a king cake that's both delicious and vegan? We have the perfect recipe for you, enough to pull the Kings and Queens, without breaking any eggs!

The ingredients:

Before you start preparing, you will need:

  • 2 vegan puff pastries

  • 250 g of ground almonds

  • 150 g of sugar

  • 3 tbsp neutral oil

  • 40 g of cornstarch

  • 20 cl of almond or soy vegetable cream

  • 1 tsp bitter almond extract

  • 1 bean

The steps:

Step 1: Preparing the frangipane

In a bowl, combine the ground almonds, sugar, oil, cornstarch, vegetable cream, and bitter almond extract. Mix until smooth.

Step 2: Assembling the cake

Spread one of the two puff pastry sheets on a baking sheet and prick the bottom with a fork. Spread the frangipane in the center of the pastry, leaving one edge free. Place the bean carefully, then cover with a second layer of pastry. To seal the edges, and prevent them from peeling, brush the edges of the pastry with a little water and a pastry brush, then seal them with your fingers or a fork (as for ravioli). Feel free to delicately draw patterns on the top with the tip of a knife.

Step 3: Golden cooking

Bake the cake in a preheated oven at 200°C for about 30 minutes until it is nicely golden.

Step 4: Tasting

Let your galette cool slightly before cutting and enjoying. Each bite should be an explosion of (vegan!) flavor.
