For a salad

Tested and over-validated!

For the salad:

  • 1 sweet potato
  • 1 handful of iceberg lettuce
  • 2 carrots
  • 2 slices of wholemeal (or cereal) bread
  • A few shavings of parmesan
  • Olive oil

For the sauce:

  • 1 tbsp mustard
  • 1/2 lemon, squeezed
  • 1 tbsp of cottage cheese
  • (Optional) you can add chopped red pepper for more beta-carotene!

Preparation

Start with foods that require cooking, namely sweet potatoes and bread.

Preheat your oven to 180°C. Dice the sweet potato and place the pieces in a baking dish, seasoning them with salt, pepper, and olive oil. Bake for about 20 minutes, stirring occasionally during cooking.

Meanwhile, slice your bread into cubes and toast them in a pan with a drizzle of olive oil, then set them aside to cool.

Cut the lettuce leaves into pieces, grate the carrots and place them in a large salad bowl to make it easier to mix with the dressing.

For the sauce, simply add the mustard, cottage cheese, and lemon to a bowl. Once mixed, simply add it to the rest of the vegetables.

Now it’s time for training!

In a deep plate, place all the ingredients (vegetables, toast, sweet potato), finish by cutting nice shavings of parmesan.

And there you have it, a salad that's as beautiful as it is delicious, to do as much good for your palate as it does for your body. ☀️
